&lt;p&gt;      a tiny little cafe, 14 family members, 12 who can&amp;#39;t eat gluten.&amp;nbsp; we traveled 70 miles to this place because we heard they had gluten free cannolis. and they did, but they had soooooo much more.&amp;nbsp; everything here was gluten free, mac and cheese quiche sandwiches pizza, panini carrot cake.&amp;nbsp; gluten free oasis!&lt;br /&gt;Kudos to &lt;a href="www.anelloscafe.com" target="_blank"&gt;Anello&amp;#39;s Gluten Free Cafe&lt;/a&gt; - &lt;br /&gt;&lt;br /&gt;and all 14 of us at once, did not rattle them one bit :) &lt;/p&gt;

Siona made me aware of these events: &lt;span&gt;&lt;strong&gt;&lt;a href="http://www.gluten.net/events.php" target="_blank"&gt;Chef&amp;nbsp; to Plate National Awareness Campaign&lt;/a&gt; &lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;It&lt;br /&gt;truly looks like something wonderful to take part in. &#8220;Celebrating&lt;br /&gt;Restaurants Serving Up Gluten-Free Awareness throughout the month of&lt;br /&gt;May and with special events May 3, 2009.&#8221;&lt;br /&gt;The idea behind this is to&lt;br /&gt;provide support to&amp;nbsp; restaurants with gluten-free menus and to spread&lt;br /&gt;awareness of Celiac Disease and other forms of gluten intolerances.&lt;br /&gt;Restaurants will be offering Gluten Free menus on May 3rd. all over the&lt;br /&gt;US. &lt;p&gt;      Gluten-Free Chocolate Cake&lt;br /&gt;(in honor of ohmsmom&amp;#39;s birthday)&lt;br /&gt;:)&lt;br /&gt;&lt;br /&gt;1 3/4 c GF flour&lt;br /&gt;2 c sugar&lt;br /&gt;3/4 c Hershey&amp;#39;s cocoa&lt;br /&gt;1 1/2 t baking soda&lt;br /&gt;1 1/2 t GF baking powder&lt;br /&gt;1 t salt&lt;br /&gt;2 eggs &lt;br /&gt;1 c milk&lt;br /&gt;1/2 c canola (or other healthy) oil&lt;br /&gt;2 t GF vanilla extract&lt;br /&gt;1 c boiling water&lt;br /&gt;1/2 t xanthan gum or guar gum&lt;br /&gt;&lt;br /&gt;*for non-vegans: I recommend evaporated milk instead of regular milk.&lt;br /&gt;*for vegans: I recommend vanilla soymilk, and replace the eggs with egg replacer or a mixture of 2 Tbs. flaxseed meal and 6 Tbs. water.&lt;br /&gt;&lt;br /&gt;Combine dry ingredients in large mixer bowl.&amp;nbsp; Add remaining ingredients except for boiling water; beat at medium speed for 2 minutes.&amp;nbsp; Stir in boiling water (batter will be thin).&amp;nbsp; Pour into two greased (or sprayed with cooking spray) and floured 9 inch or three 8 inch layer pans or one 13x9x2 inch pan.&amp;nbsp; (I&amp;#39;ve also used a bundt pan).&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Bake at 350 degrees for 30-45 minutes for layers, 45-55 minutes for 13x9x2 pan, or until cake tester inserted in center comes our clean.&amp;nbsp; Cool 10 minutes; remove from pans.&amp;nbsp; Cool completely.&amp;nbsp; I frost it using the recipe on the hershey&amp;#39;s cocoa can to make the frosting - subbing for vegan as needed.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Another option: for the 13x9x2 pan, add 1 cup chocolate chips and bake - this way it doesn&amp;#39;t really need frosting, or you can just drizzle a glaze made of confectioner&amp;#39;s sugar, vanilla, and milk (or soymilk) over it.&lt;br /&gt;&lt;br /&gt;I make this recipe for all kinds of occasions...birthdays, etc.&amp;nbsp; &lt;br /&gt;Everyone loves it - gluten-free and non-gluten-free alike rave over it and ask for seconds!&lt;br /&gt;:) &lt;/p&gt;

&lt;p&gt;      We made these cookies vegan by using the flaxseed meal/water option in place of the eggs, and substituting organic shortening for the butter. &lt;br /&gt;&lt;br /&gt;We also substituted vegan 60% cocoa chocolate chips for the raisins this time.&lt;br /&gt;&lt;br /&gt;They are delicious!!&lt;br /&gt;Even the non-gluten-free folks loved them.&lt;br /&gt;&lt;br /&gt;Some gluten-free people can tolerate these oats, and some can&amp;#39;t.&lt;br /&gt;Some can tolerate them only occasionally in small amounts.&lt;br /&gt;&lt;br /&gt;This recipe is from the Bob&amp;#39;s Red Mill website&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold"&gt;Gluten-Free Oatmeal Cookies&lt;/span&gt;&lt;br /&gt;            &lt;strong&gt;&lt;br /&gt;&lt;/strong&gt;1-1/2 cups &lt;a href="http://www.bobsredmill.com/product.php?productid=3822" target="_blank"&gt;Gluten Free All Purpose Baking Flour&lt;/a&gt; &lt;br /&gt;3 cups &lt;a href="http://www.bobsredmill.com/product.php?productid=5000" target="_blank"&gt;Gluten Free Rolled Oats&lt;/a&gt; &lt;br /&gt;1 cup Butter (softened) &lt;br /&gt;1 cup Brown Sugar &lt;br /&gt;1/2 cup Granulated Sugar &lt;br /&gt;1 tsp Vanilla &lt;br /&gt;1 tsp &lt;a href="http://www.bobsredmill.com/product.php?productid=3607" target="_blank"&gt;Baking Soda&lt;/a&gt; &lt;br /&gt;1/2 tsp &lt;a href="http://www.bobsredmill.com/product.php?productid=3677" target="_blank"&gt;Sea Salt&lt;/a&gt; &lt;br /&gt;1 tsp Cinnamon &lt;br /&gt;2 large Eggs* &lt;br /&gt;1 tsp &lt;a href="http://www.bobsredmill.com/product.php?productid=3683" target="_blank"&gt;Xanthan Gum&lt;/a&gt; &lt;br /&gt;1 cup &lt;a href="http://www.bobsredmill.com/product.php?productid=3679" target="_blank"&gt;Raisins (Unsulfured)&lt;/a&gt;&amp;nbsp;&lt;br /&gt;              &lt;br /&gt;             &lt;br /&gt;              Preheat&lt;br /&gt;oven to 350&#176;F. Beat butter and sugars together until smooth. Add&lt;br /&gt;vanilla and eggs; beat well. In a separate bowl, blend flour, cinnamon,&lt;br /&gt;baking soda, salt and Xanthan Gum. Stir flour blend into wet&lt;br /&gt;ingredients. Add oats and raisins and mix well. Drop rounded&lt;br /&gt;tablespoons of dough onto un-greased cookie sheet. Bake for 10 &#8211; 12&lt;br /&gt;minutes, or until golden brown. Cool one minutes then transfer to wire&lt;br /&gt;rack. Makes about 4 dozen cookies. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;*Eggless Option: Mix together 2 Tb. Flaxseed Meal with 6 Tb. of water&lt;br /&gt;and let sit for a minute. &lt;p&gt;      Well, here it is, Spring. Time to welcome back so many wonderful foods back into our diets. Fresh berries, peaches, apricots and nectarines. Summer melons are on the way. Cooking can take to the outdoors. It&amp;#39;s exciting.&lt;br /&gt;&lt;br /&gt;Remember, if you have a special springtime recipe, post it on the recipe boards. I will do the same. My feeling this year is to go even more natural, and try to cram more whole foods into the diet. I feel so much better when I eat them. I shared a lunch with a friend the other day, and it was so simple, wholesome, delicious and processed food free that I could really feel an absolute shift in my energy. &lt;br /&gt;&lt;br /&gt;I guess I could call this the Spring Pantry Cleaning mood. Don&amp;#39;t know for sure, but if anyone else has any new or exciting food finds or info to share, please do. &lt;br /&gt;&lt;br /&gt;xo&lt;br /&gt;Andrea &lt;/p&gt;

&lt;p&gt;      It also may have just been my body at the time. I was in depths of discovering I had lupus back then. I am sure that the SLE had some effect on what I was able to eat well and not. Yes, much more detective work would need to be done to really know the answers. &lt;/p&gt;
