Grandma’s Healing Soup RecipeA steaming bowlful on a cold winter day is so wonderfully soothing 1. In a soup pot, heat the olive oil and add the leeks, carrot, potato, parsnip, and garlic. Cook, stirring occasionally, over medium heat about 5 minutes. Add stock and salt to taste, then bring to a simmer. 2. Simmer soup, partially covered, for about 5 minutes, then stir in parsley and spinach. Simmer, partially covered, about 5 more minutes. Add pepper to taste and serve piping hot. Serves 4 to 5. ![]() |

![]() Restorative Roasted Garlic SoupSome recipes for garlic soup are so laden with cream that the salubrious effects of the garlic are certainly thwarted. In this recipe for roasted garlic soup, you will find no cream. No dairy at all in fact. Instead, a creative combination of flavors with a Mexican spin that is as perky as it is restorative. Roasting and simmering mellow the garlic’s sharpness and enhance its underlying sweetness. This is one delicious way to boost your immune system so you can avoid the flu, or to nourish yourself if you’ve caught it. INGREDIENTS 3 whole heads of garlic 1. Preheat oven to 400 degrees. 2. Coat garlic with a thin film of the oil, reserving the remaining oil. Place garlic in a shallow pan and bake it until very soft, about 45 minutes. When garlic is cool enough to handle, peel all the cloves and reserve them. 3. Pour 1 tablespoon of the oil into a large saucepan or Dutch oven and warm over medium heat. Add the onion to the oil and saute until it’s softened and lightly colored. Transfer the mixture to a blender and add the reserved garlic. Puree, adding a little stock if necessary to blend the mixture. 4. Add remaining oil to the saucepan and warm it over medium-high heat. Pour in the blender mixture, being careful of any splatters, and saute it until it just begins to dry out and color. Add the rest of the stock, the chipotle, salt, and cumin, and reduce the heat to medium. Simmer the soup for 25 to 30 minutes, remove it from the heat, and add the lime juice. 5. Divide the tortilla strips and avocado between the bowls and pour the hot soup over them. Serve immediately. Serves 6 to 8.

A bowl of Healing Soup chases away winter colds. Ingredients: Heat oil and add onion, plus carrots, celery and garlic, as they are prepared. Sauté a few minutes, then add stock, kale, and lentils. Cook over medium heat until kale begins to lose its color, about 20 minutes. Add tomatoes and rest of ingredients, except miso. Cook 20 minutes or until lentils and carrots are soft. Turn off heat and add miso, mixed with a little liquid from the soup or with warm water. Serve warm. *Notes about ingredients: Green “le Puy” lentils are preferred; they hold their shape better than brown, and are less starchy. Health food stores sell them in bulk, but if you can't find them, substitute plain brown lentils. Miso can be found at most health food stores or Asian grocers. If you can't find it, leave it out. I've used plain kale as well as the more adventurous dino-kale (aka Lacinato) or exotic Russian kale for this recipe; any will work. |

just to report that i've made this soup several times now and each time it gets better as i improvise. try adding a shot of sherry to the sauteeing onions! also add a can of lite coconut milk to thicken it! and add a hearty pinch of cayenne pepper instead of chipotles, if you so fancy! yumiola! |

Hi, Samme - thanks for these - they look wonderful! I trust, since you’ve posted them here in the Care Packages pod - they’re meant to be shared with other folks outside the pod as each person might feel led? I make various soups to share as well - though I don’t have nearly such exact recipes - I tend to go by feel. One of my favorites for fall and winter is a version of the southwestern soup Caldo Largo: About 46 ounces of tomato juice (one large can, or 1.5 qts)
Bring the tomato juice and chicken stock to a boil, add peppers and barley - cook until barley is tender and soaking up the liquid well. Reduce heat until barely simmering - add milk and serve into bowls with cubes of cheese in the bottom. Care needs to be taken when adding the milk so it won’t separate. Depending on how much barley you add and how long you cook it and how thick you like your soup (or stew [smile]) to be - you may wish to add more liquid - chicken stock or even water work. Makes 4-6 servings. If you have leftovers you may find the barley has soaked up more liquid during storage - so adding stock, juice or water might be desired when you reheat it. It tends to be good leftover - the flavors blend together and get fuller. Enjoy! Sylvia |

Hi, Anna - one of the things I like about Caldo Largo is I can make it as hot or mild as I want - depending on the intensity of the peppers or how much hot sauce I use. The cheese and the barley also help it be less fiery :-). Usually it just winds up warming my tummy when I eat it [smile]. That’s a great picture of soup - I didn’t see a name or a recipe for it - what is it called? peace and blessings - Sylvia |

Hi, Anna - I've done some vegan cooking for various reasons - and I find the creativity can be a lot of fun. Using whole grains, beans and tofu can add a lot of fiber, substance and protein to various dishes. And different kinds of beans have wonderful subtle and obvious variations. Soups tend to be great opportunities for experimentation - lentils, beans, tomato stock … even yams and sweet potatoes. |

oh, yeah, an addendum to my addendum above. i cubed a pound of tofu and sauteed it in extra garlic and put it in the garlic soup, i added lots of fresh cilantro at the end! |

Hi, Mary - the cilantro and tofu sound like yummy additions. One thing my mom taught me about roasting garlic - instead of peeling it after it's cooled - you can squeeze the ends of the cloves and they'll squirt out :-). Much less mess and hassle. |
