Leigh-Anne's Birthday!!

well, being the absolute sieve brain that I am, I missed our dear Leigh-Anne’s birthday, it was ( I think..) YESTERDAY. So.. instead, this is going to be a happy birthday WEEK to you dear one. Thank you so much for being you, for bringing what you do to Diving Deeper, your wonderful writing and comments and support to all of us, and for hanging in there when it’s been such a hard time for you lately.

Andrea: hehe thanks, it is funny you say that because my little sister would say that to me (but the opposite). She’s 18 months younger, and there would be that point in the year that she would feel like she was catching up.. Then my birthday would come around and she’d be so disappointed ;-) Anyway, I am getting there - but maybe I stay at 39 forever now, ok??

Rumi: It’s a good thing that there was no camera around to watch me as I read your post - in fact I did do this *mouth drops* “What? me an inspiration? nooo I don’t think so, that’s too much”… but thank you for saying so. Cheers to you *lifts tea cup* It’s too early in the morning for anything stronger…

Happy Birthday Leigh-Anne. 39 is a wonderfully feminine, round and curvy number. Enjoy every minute of being 39, and then… eh, live now. Who cares what’s next.

39?  You’re just a baby!!!  I practiced saying the dreaded “40” the whole year I was 39 so when I actually did turn 40 it was easy to say!!!

my cake posting abilities have been thwarted by the CIA. So instead I’m going to post the recipe of something I made today, they look plain and boring but they are really very tasty. A Jensen family tradition. Perhaps a needed wholesome bite after that cheesecake… :-)

Sandra’s Crunchies

Mix together:

1 cup flour
1 cup coconut
2 cups oats
pinch salt

Melt together until frothy:

4 oz b utter
1 cup light brown sugar
1 tbsp golden syrup
1 tsp baking soda

Mix both lots of ingredients together and press into a greased swiss roll tin.

Bake in a moderate oven for 30 - 40 minutes until golden.

Cut into squares while hot but leave in the tin to cool. They should be crispy (hence ‘crunchies’…)

hahahaha birthday month!?? no no no *serious face* ummm no. This last cake is pretty awesome though. I don’t mind if there is a dude in a funny hat as long as he is serving me something sweet!
