Endangered foods and recipes from our grandmothers are disappearing fast and furiously from our world. Around the globe industrialized highly processed foods have pushed out small scale artesian products...(more) that have been passed down for generations. We have no idea how many cultures and recipes have already been lost to us.
This Pod is geared towards reviving these ancient food preparation rituals. An example of this is the groups who are bringing back lacto-fermented foods, such as Sandor Ellix Katz also dubbed Sandorkraut, who is doing workshops around the United States teaching people how to pickle….
These micro-organisms existed symbiotically with humankind for generations. In Korea, each family had their own strain of kim-chi that was handed down mother to daughter. In our Western societies mothers used to give their daughters some of the family sourdough culture to ensure she had a starter for her own families bread. There are many other examples of these traditional relationships throughout the world.
Another food item that is on the endangered list is raw dairy, this food has been with us for millenium and has been under attack by the industrial dairy for the last 80 years or so. It is enjoying a come-back now but already most Western countries have lost the majority of their small scale dairies.
Lets renew our relationship with these bacteria and yeasts in order to reestablish healthy digestive tracts, nervous systems and immunity. (less)
