I’m starting this thread so people can throw down any healthy food experience they’ve enjoyed lately.  This could be a new dish you’ve created through your own inventive and experimental nature, or a recipe you’ve come across that you currently enjoy… even add in your old time favorites.  Also feel free to write down a whole daily food experience if it was a good one… share, share and share some more, that’s the purpose of this thread!

One of the dishes I’ve been enjoying lately is my ever evolving fruit salad… really the fruit can and does vary, but in my case they’re usually all organic.  What makes my fruit salads unique is that I get my chocolate fix through them by sprinkling organic raw chocolate (cacao nibs) in the mix after putting them through a coffee grinder.  Second I throw in a two heaping tablespoons of organic hemp protein powder (15g protein).This is a really great tasting dish that has many added health benefits when the raw chocolate and hemp is added with the fruit.  The chocolate by itself isn’t that tasty, but the natural sugars in the fruit masks the bitterness while leaving you with that chocolate flavor most people love…

I walked into this  cafe just to try it out and I tried this amazing chocolate made without sugar and milk and it was so good. I even tried a sandwhich made with romain lettuce as the bread with almond pate  avacados and tomatos. It was so yummy.

My major staple meal is a lot like Mango Lassi.
I use organic milk, which I ferment into an extrmely active probiotic kefir.

1/2 large mango or whole small one
a couple of pineapple chunks
2 organic banannas
blend that up at low speed in the blender
add about  a cup of kefir  blend just long enough to mix (seconds only)
add 3 organic free-range hi-omega-3 eggs blend for seconds only.

This has been my usual morning meal (4 or 5 days /week) for  years, since I read Dr. Mercola's writeup on raw eggs .. far more nutritious and easily digestible raw..   they're also considered a “health food” in Mexico, and I'm sure elsewhere..  though I'd avoid the factory farmed eggs.

Often I don't get hungry after this breakfast until dinner.
I use no vitamins or supplements, and am amazingly healthy .. people were coming down with colds & flu all around me the Winter..   I did have almost a week where I felt low-energy and very slight swelliing in the lymph nodes.  Nothing like the illness a lot of folks suffered.

Blend together, with wisk or by shaking… then use just enough toasted sesame oil to emulsify. Fantastic on any salad, great marinade for vegetables before going on the grill. Try it. It's lovely.

Every Sunday my mom and I bake together.  We each make a batch of our baked oatmeal bars, and they become our weekly snack.  I eat one everyday between my breakfast drink and my lunch.  (everyone who's tried them loves them)
3 cups of orgnaic old fashioned oats
1 cup regular or vanilla soy milk
2-4 eggs (your choice depending on desired protein content)
1 T olive oil
1 T ground flax seed
1 t baking soda
1/2 cup of organic honey or pure maple syrup ( I also found an organic butter pecan rice syrup, mmmmmm)
2 cups of chopped dried fruit (your choice)
3/4 cup nuts (your choice)
t spices (your choice)

Bake at 350 for about 35-45 minutes in an 8x11 or 9x13 then cut into 6 or 8 bars.  Best to store in the fridge, but can keep in your purse, bag or desk for a day and they won't go bad.

each bar has about 200 calories and 15g of protein (with 4 eggs), maybe 7g fiber

****Best combos:
cherry, almond, vanilla
craisin, orange zest, ginger, pecan
blueberry, lemon zest, vanilla, pecan
cherry, date walnut (less sweetner needed)
plum walnut
apple, cinnamon, walnut
raisin, cinnamon, nutmeg, clove
craisin macademia (could add white choc.)
appricott pecan

1) A few blueberries and strawberries once in the morning and once in the evening are very effective at maintaining optimal function of your hippocampus, a key part of your brain for good memory. 

2) Eggs are a great source of choline, a vitamin since 2000. And choline is very important for maintaining your brain. The current daily value is 450 mg, but actually 850 mg is recommended. THIS VITAMIN IS ESPECIALLYIMPORTANT FOR BABIES FROM CONCEPTION TO AGE 4. One presentation showed your child is likely to be 30% more intelligent their entire life if given sufficient choline during this period. So the evidence in these presentations indicate your child will benefit if you eat eggs when you are pregnant and nursing, and feed your child eggs as soon as they are able. 

3) This same can be said for cold water fish or fish oil or blue green algae DHA and EPA. These nutrients are also essential for brain development and maintenance. To maintain flexible cell membranes so you can make connections between nerve cells when you learn things, you need DHA/EPA and choline. 

4) Last topic was many sections about epigenetics. This is the process by which a person’s DNA becomes labelled from conception to 4 years of age. That labelling controls the expression of the DNA for the person’s entire lifespan. The control of DNA expression is reset each generation. This is one important reason why twins can be identical yet still be very different in genetic traits - their DNA is under different regulatory control because of epigenetic labelling.

Easy Vegan Wheat Bread
Ingredients (use vegan versions):

    2 1/2 cups warm water
    3 cups whole wheat flour
    2 tablespoon of yeast (or two packets)
    1/2 cup molasses
    1/4 cup vegetable oil
    1/4 cup soy milk
    3 to 4 cups unbleached white flour
    1 teaspoon salt

Directions:

This is super easy to make. Most of the time is spent letting the dough rise and bake. You don't spend much time in the kitchen…I SWEAR!

Mix water, yeast and 1 tablespoon of the molasses together in a large bowl. Pour in the 3 cups of wheat flour and mix well.  Cover the bowl with a towel and place in a dry place. Let it sit for a minimum of 20 minutes, up to a day! Fit it into YOUR schedule.

Pour in the rest of the molasses, oil, soy milk and salt.  Mix together. Begin adding white flour, a 1/2 cup at a time. After the third cup, it begins to get pretty dense. I begin kneading the vegan bread in the bowl and it is still a bit sticky, so I'll add another 1/2 to 1 cup of flour as I knead the vegan bread. Knead it for 5 to 10 minutes until it is smooth and elastic.

Cut the dough into two, equal parts. Shape them into loaves and place them into two, 8 1/2 x 4 1/2 greased vegan bread pans.  (You can also make 24 rolls…or 1 loaf, and 12 rolls…whatever you want!!!).

Cover pans with a towel in a warm place and let the dough double in size. This will take at least an hour to an hour and a half.

Baking: Bake loaves at 350 degrees F for 35-40 minutes.  Rolls should be baked at 375 degrees F for 20 minutes.

What's really great is I've experimented–adding in chopped apples, cinnamon, and unbleached sugar; bananas and walnuts; and other things and they've come out great. You can really play around with it and make some great stuff. :)) I'm going to try adding some pumpkin to it–mmm. I'll let you know how it goes.

6 free range eggs, seperated
6 tablespoons brown sugar/dehydrated cane juice
1 large 250g bar of dark chocolate (preferably over 70% cocoa solids)
300mls blended silken tofu or whipped cream

Whip egg whites untill they form peaks, beat in the sugar one tablespoon at a time
Melt chocolate and add egg yolks
Mix chocolate/yolks with tofu/cream and then fold in egg whites and stir until the chocolate colour is even
Put into a container in the freezer - this should freeze well without an icecream maker

Serve with berries or seasonal fruit

Oh, for breakfast… I really love to eat two whole grain waffles with peanut butter and apples. Try this one:  Peel and slice a pineapple into chunks, peel and slice a cucumber, create very thin slices of red and green sweet peppers and purple onion.Combine all veggie slices and pineapple chunks in a salad bowl, cover with fresh pineapple juice. Then sprinkle Spice Island BeauMonde Seasoning and Cracked black pepper seasonings on top of the raw food after they have marinated in the pineapple juice over nite. You can add a bit of oil if you like.  I do not use oil on mine.  ___________________________________
And for desert:  2 bananas, 1 1/2 ripe avocados, 1/4 cut of raw chocolate powder. Blend it - it's like chocolate pudding.  You can add berries, a little honey if you like and some nice roasted pecans.

This is a wonderful snack I read, from “Chopra Center Cook Book” and finally tried out….soooo good for a fix'me up or when on a hike or what ever the time of day.

2 cups organic rolled oats
a quarter cup sun flower seeds
a quarter cup pine nuts
a quarter cup flax seed
a quarter cup sesame seeds
half cup almonds or pecans, slices or pieces
2 tbsp poppy seed
half cup coconut flakes
1 tbsp cinnamon
1 tsp nutmeg
1 tsp allspice
2 tbsp ghee or canola oil
2 tbsp apple juice
2 tsp vanilla extract
a half cup maple syrup
a quarter cup dried cranberries
a half cup currants or chopped dates

Preheat the oven to 350 degrees.  Oil a sheet pan and set aside.  Combine all the dry ingredients, excluding the cranberries and the currants, in a bowl.  Combine all the wet ingredients in a large bowl, add the dry ingredients, and, with plastic sandwich bags on your hands, toss together until well combined.  Spread out on the oiled sheet pan.  Bake for 30 minutes or until golden brown.  Stir often with a spatula for even cooking.  Add the currents and cranberries after the granola is baked.
Cool completely, then store in a resealable plastic bag.  Enjoy with soymilk.

“Nutritional Facts:”  Per half cup serving
                            Calorie 353, Total fat 15.6 g, Saturated fat 4.4g,
                            Carbohydrates 43.8 g, Protein 9.8 g

I love placing this lovely finger food in a fancy dish on the coffee table…it sure beats the craving for a bag of chips when watching a movie on the telly:)

As you know Saffron has many benefits. 

Try a few threads of it in the mornings on any cereal and warm milk if you don't mind warm milk.

Only then you will get it to dissolve to get the flavor and fragrance.

Hi Clare,Lot of the mention about benefits of Saffron are anecdotal.You can visit the site www.indusladies.com and check out the forum sectionor do a search within that.many Indians use this,ofcourse one should use it in very small amounts,few threads only.Many culinary benefits as well.I think it has general tonefying benefits on one's health.I have enjoyed it

These are wonderful recipes, every single one.  I am especially drawn to the trail/snack mixes due to spending a lot of time in the woods.  The information on fresh water fish, eggs and berries is of deep interest as well.  I have found that since incorporating these things fully into my diet, it has made a tremendous difference in how I feel on several levels.

I used to drink smoothies made of orange juice and fresh spinach every morning. Just throw a handful of spinach leaves into a blender of about 2 cups of orange juice ( or more).  
I can promise you will not be able to taste the spinach-it tastes like orange juice! And it is a great way to get your green veggies! Try it! :)

Here's some good juicing info:
Green Juices


These nutritional powerhouse drinks have amazing health benefits. Made from a variety of green vegetables, they are rich in clorophyll, which helps build red blood cells, purify the blood, heal body tissues, detoxify the system, and boost immunity.
8 - 10 oz. daily is advised. Too much green juice can be overstimulating.
Combine any combination of the following:

Alfalfa sprouts, Cabbage, Kale, Dandelion Greens, Spinach, Chard, Lambs Quarter, Brocoli, Celery, Cilantro, Parsley, Wheat Grass.
Apples or carrots can be added to your green drinks to dilute and sweeten.
Here's an excellent all around green drink recipe:

Jody said just discovered fiddlehead ferns and ramps (wild leeks).  Talk about yum!  I sauteed the ferns with some garlic, sea salt and pepper and put them over buckwheat soba noodles.  The ramps are good in eggs, on toast, in salads - just about anywhere you might use garlic, scallions or leeks.  They have a wonderfully strong flavor that's a cross between onion and garlic.  Both are only around in the Spring, so look for them now!  Ramps grow in Appalachia and Michigan, so they may be hard to find in AZ.  I found them at Whole Foods here in New York.  I think there are places online, though, that you can actually order them to be sent to you.

Juicing is great, but I would caution that it's not good for everyone. Carrot juice could induce too large of an increase in blood sugar, which could make the pancreas work harder.

I juice celery and spinach, and it works to some extent. I notice my body requires more calories when I drink vegetable juice, but I really like the idea of an easy-to-digest form of raw vegetable, so I juice. I don't go crazy with it.

For more information, see Dr. Mercola's recommendations for juicing (type “juicing” in the search box on http://www.mercola.com). It depends on metabolic type as he explains. Metabolic type is unique for each individual, so it is worthwhile to notice how your body responds to particular foods.

Thanks for this tip Ken. I agree and am happy to add your caution as a disclaimer that each should check things out for themselves and Dr. Mercola is a wonderful website for getting their newsletter and using as a tool.

I am interested in more website like this for this site from all of us. I can open a room just for references such as this one.

This helps bring more quality by sharing other's experience.
