Food for the REAL Road Trip

Hi Lovely Peri,

Well I can eat anything, so please never worry about me.  The original omnivore!  :)

I'd like to make dinner, or part of a dinner, and this is what I would like to make:  It's a bedouin rice and meat dish called Kapsa.  I CAN make it on an open fire if you want, but much easier on the stove.  Or, if we have enough people, I can make some on the open fire as an experiment, and the most of it on the stove. 

I am bringing lots of CUMIN and TURMERIC. 

Ingredients:  chicken (you can use any non-pork meat, but chicken is just easiest for this scenario, I think, but if you want me to use lamb, or even beef, that's ok), olive oil, yellow onions, tomatoes, salt, pepper, cumin, turmeric, and Uncle Ben's rice (yes, modern Bedu prefer Uncle Ben's).  It takes a couple of hours to make.  It is best when accompanied by a green salad, and to many people's palate the whole thing is great with a little ranch dressing.

For the vegan folk, I can make the same recipe, but just using zucchini and whatever veggie anyone wants, and no meat.  It's great with zucchini.  If I make a meat version AND a veggie version AND a salad, that will be plenty of food for a meal, I'm thinking. 

Also, a little wine (red for me!) is excellent with this food.

Yeah Martha!  This sounds fabulous!!!!  Haha, I don't cook much but do have a great recipe for grilled vegetables if we have a place to grill and, for the nonvegs, I can flip an egg :)

Will we have a blender?

I can eat what's available :)

Not to be a party pooper, but eating is where my social abilities are pretty non-participatory. I will bring food and probably need to run down to the health food store while I'm there.  I have many violent food allergies and simply cannot eat a lot of things. I'll contribute some dishes to share. That works best for me. Otherwise I'll either be in the hospital or the bathroom the whole trip and I Plan To Have Fun!

Allergies:
Gluten-Wheat, Oats, Barley & Rye
Chicken including eggs
Turkey (unless it is certified gluten free)
Some red meats have gluten based red dye to make you think its fresh..
Salt (Its the iodine)
Anything with: Modified Food Starch, Seasonings, Natural Flavors, Artificial Flavors and others too long to list.

I guess you get the picture…There are still fun things I can eat and will bring along with me. Please don't feel offended if I can't eat your offerings, I will celebrate and enjoy vicariously through you all! I will bring my own Gluten Free Beer and some wine. ;9)

You can feed us, that's ok.  I guess I'm just curious about what would NOT be on the list…  ok, just being bad.  Hey, chocolate isn't on the list…  :)

Made with fresh fish/shell fish bought locally in Florence or nearby … it will be full of love, fresh fish/shell fish, veggies, incredible seasonings and will be served …
with candle-light, great music and ocean breeze …

I will need help w/ cutting veggies and making the salad and preparing HOT BREAD to go along with this meal … 

Shall we have this on Sunday night???  It will be very memorable … as it will be full of LOCAL food from the ocean and the area??? 

It would be fun to start this meal with a selection of finger foods … anyone want to volunteer to do that?
